Cauliflower

Cauliflower (Brassica oleracea var. botrytis) is a cruciferous vegetable with a dense, white head (also called a "curd") made up of tightly packed florets. It has a mild, slightly nutty flavor and a firm, crunchy texture when raw, which softens when cooked. Cauliflower is often used in a variety of dishes, from raw in salads to steamed, roasted, or used as a substitute for rice or mashed potatoes. It is rich in vitamins C, K, and B6, as well as fiber, antioxidants, and other nutrients, making it a nutritious addition to many meals.
