Chinese Spinach

Chinese spinach, also known as amaranth greens or yin choy (莧菜), is a leafy green vegetable popular in Chinese and Southeast Asian cuisine. It comes in green or red-veined varieties, with tender leaves and stems that cook quickly. Mild and slightly earthy in flavor, it becomes soft and silky when stir-fried, sautéed, or cooked in soups.
