Old Cucumber
Old Cucumber, also known as mature cucumber or 老黄瓜 (Lǎo Huáng Guā) in Chinese, is a variety of cucumber that is harvested at full maturity. It has a thicker, rough brownish skin, firm, pale flesh, and a mild, slightly sweet flavor. Unlike young cucumbers, old cucumber is commonly used in soups and slow-cooked dishes, especially in Chinese cuisine, where it is prized for its ability to absorb flavors and its cooling properties.
